Salmon Fish Sticks (3-4 servings)
- 1 lb of salmon
- 2 eggs
- 1/2 cup of flour
- 1 1/2 cups of Panko breading
- 3 cups of vegetable oil
- Salt and pepper to taste

1. Heat vegetable oil in small pot.
2. In three separate bowls, prepare the breading. In the first bowl, pour in flour, salt, and pepper. In the second, whisk two eggs.  Lastly pour panko into the final bowl.
3. Rinse, dry, and then cut salmon into 1/2 inch strips. Ensure that the strips will fit into the pot you have prepared.
4. Once cut into strips, dip the salmon into the bowls in the order described in step 2 (flour, egg, panko).
5. Lastly, deep fry the breaded salmon strips in and remove when golden brown.

Spicy Dipping Sauce
- 1 tbsp Sriracha Sauce
- 1 tbsp of Grey Poupon
- 1/2 lemon worth of lemon zest
- 2 tsbp of Ketchup
- 1 clove of garlic
- 1 tsp of vinegar
- Salt and pepper to taste

1. Finely dicing or using a garlic press, prepare 1 clove of garlic and set aside.
2. Zest approximately half of a lemon and set aside.
3. In a small dipping bowl mix ketchup, sriracha sauce, and grey poupon.
4. Add garlic and lemon zest to condiment mix and serve at room temperature or chilled.
